If that doesn't work then we would like to see the output of an Etrecheck report, Sierra would have needed the Legacy Java Runtime to open CS5 so you should have had it already installed, just to be sure this is the download you want, Download Java for OS X 2015-001 download and double-click to install, so you might want to try that again.
If it was working in Sierra then it should be running in High Sierra, my Adobe products haven't been affected by the upgrade. If you can't read the screenshot just click and drag onto Preview to open it up.
Roaring apps is a site that is often recommended here, from the screenshot below you can see that Illustrator CS5 is fine with High Sierra, but Illustrator CS5.1 has not data as yet.
